Strawberry Topped Custard Pudding
Ingredients
Makes 8 servings
- 1 cup self-raising flour
- 1/2 tsp bicarbonate soda
- 1 punnet (250 g) strawberries
- 1 cup white sugar
- 80 g unsalted butter, melted
- 1 Tbs vanilla essence
- 1/2 cup low (1%) fat milk
- 1 egg
- 1/2 cup low-fat thick custard
Method
- Preheat oven to 180oC.
- Brush a 1.5 L ovenproof dish with butter.
- Combine flour, bicarbonate soda and sugar in a bowl.
- Whisk melted butter, vanilla essence, milk, custard and egg.
- Mix wet and dry ingredients.
- Spoon into prepared dish and top with the strawberries.
- Bake for 30 minutes or until a skewer stuck through the centre comes out clean and the top of the pudding looks like a cake.

- This pudding can be made with any seasonal fruit such as blueberries, raspberries or blackberries. Adding extra fruit will provide more vitamins and minerals to help keep your body healthy.
