Strawberry Topped Custard Pudding


Ingredients

Makes 8 servings 

  • 1 cup self-raising flour
  • 1/2 tsp bicarbonate soda
  • 1 punnet (250 g) strawberries
  • 1 cup white sugar
  • 80 g unsalted butter, melted
  • 1 Tbs vanilla essence
  • 1/2 cup low (1%) fat milk
  • 1 egg
  • 1/2 cup low-fat thick custard


Method

  1. Preheat oven to 180oC.
  2. Brush a 1.5 L ovenproof dish with butter.
  3. Combine flour, bicarbonate soda and sugar in a bowl.
  4. Whisk melted butter, vanilla essence, milk, custard and egg.
  5. Mix wet and dry ingredients.
  6. Spoon into prepared dish and top with the strawberries.
  7. Bake for 30 minutes or until a skewer stuck through the centre comes out clean and the top of the pudding looks like a cake.

Tips

  • This pudding can be made with any seasonal fruit such as blueberries, raspberries or blackberries. Adding extra fruit will provide more vitamins and minerals to help keep your body healthy.
  • When choosing a brand of custard, check the nutrition panel on several different brands and choose the one with the lowest fat content. By choosing low-fat options every time you shop, you can improve your diet and reduce the risk of obesity and other health conditions.
