Prawn Pasta

Ingredients:

Number of servings: 4

  • 500 grams packet fresh fettuccini
  • 500 grams fresh peeled green prawns
  • 1 tablespoon butter
  • 2 x tomatoes, peeled, seeded and chopped
  • 1 x clove chopped garlic
  • 1/2 red onion finely diced
  • 1 lemon
  • 200 g reduced fat feta

 

Preparation time: 5 min
Cooking time: 10 min
Difficulty rating: Easy

 

Method:

  1. Cook fresh pasta according to packet directions, drain and set aside.
  2. Fry the garlic, onion and prawns in a little butter till the prawns start to change colour.
  3. Add the chopped tomatoes and a squeeze of lemon juice.
  4. Stir until heated through.
  5. Place pasta in serving bowls, top with prawns and sprinkle the feta on top.
  6. Season with salt and pepper.

 

Tips:

  • Add chilli for prawn pasta with zing;
  • Delicious with a green salad which is also a great source of additional vitamins and minerals. They are important for maintaining a healthy body. Serving all meals with a side salad is an easy way to ensure you eat all the vegetables you need for a healthy balanced diet;
  • Make sure you used reduced salt, low fat feta cheese. It contains the same amount of calcium as full fat feta, but less fat and calories. Check the package labels of several brands and choose one with the least fat and salt. Make a habit of choosing products with low fat, sugar and salt content. It will improve your diet and reduce your risk of developing chronic health conditions like obesity, erectile dysfunction, type 2 diabetes mellitus and metabolic syndrome;
  • Choose whole wheat pasta instead of white pasta. Whole grain cereals like brown pasta and rice have more fibre than products like white pasta and white rice. Fibre is an important micronutrient used by the gastrointestinal system to digest food.
