Feta Potato Mash

Ingredients
Serves: 6
- 4 medium potatoes, peeled and chopped
- 1/4 cup Australian skim milk warmed
- 100 g Australian low salt feta, crumbled
- 40 g Australian parmesan cheese, grated
- 2 tablespoons chives, finely snipped
- Feshly ground black peeper, to taste
Method
- Cook potatoes in boiling water untill tender. Drain.
- Using a potato masher, mash hot potatoes untill smooth. Add milk, feta, parmesan and chives and stir until combined. Season to taste.
