Feta Potato Mash

Ingredients

Serves: 6

  • 4 medium potatoes, peeled and chopped
  • 1/4 cup Australian skim milk warmed
  • 100 g Australian low salt feta, crumbled
  • 40 g Australian parmesan cheese, grated
  • 2 tablespoons chives, finely snipped
  • Feshly ground black peeper, to taste


Method

  1. Cook potatoes in boiling water untill tender. Drain.
  2. Using a potato masher, mash hot potatoes untill smooth. Add milk, feta, parmesan and chives and stir until combined. Season to taste.
