Trim and Terrific Beef Lasagne
Ingredients
Serves 6
- Cooking oil spray
- 1 medium onion, finley chopped
- 2 cloves garlic, crushed
- 500 g premium extra trim beef mince
- 850 g canned no added salt diced tomato
- 2 tablespoon fresh oregano, finely chopped
- 2 tablespoon fresh basil, finely chopped
- 500 g Australian low fat cottage cheese
- 250 g frozen spinach, thawed and excess liquid well drained
- 1/2 cup fresh basil, chopped, extra
- 200 g instant lasagne sheets
- 100 g grated Australian 50% reduced fat cheddar cheese
- Green salad, for serving
Method
- Lightly spray a frypan with cooking oil spray. Sauté onions and garlic until soft. Stir in beef minced and cook until browned.
- Stir in undrained tomatoes, tomato paste and herbs. Simmer for 30 minutes or until most of the liquid has been absorbed.
- Combine the cottage cheese, spinach and extra basil in a separate bowl.
- Place 1/3 of lasagne sheets over the base of a 2 litre capacity lasagne dish. Cover with 1/3 of the beef mixture and 1/3 of the cottage cheese. Repeat layers twice more and sprinkle top layer with cheddar cheese. Bake at 180°C for 30 minutes, cover with foil and then bake for a further 30 minutes. Serve.
