Cheesy Crumbed Chicken

Ingredients
Serves: 4
- 1 cup fresh breadcrumbs
- 1/2 cup Australian reduced fat cheddar cheese, finely grated
- 2 tablespoons parsley, finely chopped
- 4 X 125 g skinless chicken fillets, pounded flat
- 1 cup Australian low fat or skim natural yoghurt
- Steamed vegetables, for serving
Method
- Combine breadcrumbs, cheddar cheese and parsley in bowl.
- Dip chicken fillets in yoghurt to coat, then dip into cheesy breadcrumbs.
- Place onto a paper-lined tray and bake at 200oC for 10 minutes.
- Turn and cook for a further 5 minutes, or until cooked and golden.
- Serve with steamed vegetables.
